Capacitors (electrolyte) and the Diodes used can be of any rating depending upon the requirement of your output load e.g in 150watts amplifier circuit you need 4700uF/50v capacitors and 6A diode bridge. You can also use the higher rating for better results,the other (non polar) capacitors which are used in this circuit are the bypass capacitors if you do not use these capacitors your supply will still be ok but for preventing your output load its recommended to use them because they ground high spike of the current and give protection to your amplifier's transistors or IC's from burning. They can be 100nf or 104.
